You can enjoy a delicious Korean barbecue at home. It’s all about the marinade and good quality meat, and it’s easy to prepare! Galbi (or Kalbi, 갈비), Korean beef short ribs, is one of the most popular barbecue dishes in Korean homes, especially for special occasions and gatherings. Here’s my tried-and-tested recipe for the perfect galbi marinade!
Ingredients for LA Galbi (Korean BBQ Short Ribs):
- 2 lbs beef short ribs (cut Korean-style, thinly sliced across the bone)
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1/4 cup brown sugar
- 3 tablespoons rice vinegar
- 2 tablespoons minced garlic (about 4 cloves)
- 1 tablespoon ginger, grated
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon mirin (or dry white wine)
- 1 tablespoon sesame seeds (for garnish)
- 3 green onions, chopped (for garnish)
- 1/2 pear, grated (optional, for tenderizing the meat)
- 1 tablespoon ground black pepper
- 1 tablespoon honey (optional for extra sweetness)
- 1 tablespoon water (to adjust marinade consistency)
Instructions:
- Prepare the Marinade: In a large mixing bowl, combine the soy sauce, sesame oil, brown sugar, rice vinegar, minced garlic, grated ginger, gochujang, mirin, sesame seeds, and black pepper. If you’re using pear, grate the pear and add it to the marinade to help tenderize the meat. Optionally, add honey for a touch of sweetness.
- Marinate the Ribs: Place the short ribs in a shallow dish or large resealable plastic bag. Pour the marinade over the ribs, ensuring they are evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, ideally overnight, for the best flavor.
- Preheat the Grill: Heat your grill or grill pan over medium-high heat. If you’re using an outdoor grill, ensure it’s clean and lightly oiled to prevent sticking.
- Grill the Short Ribs: Remove the short ribs from the marinade and discard the marinade (for food safety). Place the short ribs on the grill and cook for about 3-5 minutes per side, or until they are nicely caramelized and slightly charred, but still juicy inside. You can also use a grill pan on the stovetop if grilling outside isn’t an option.
- Rest and Garnish: Once the ribs are cooked, transfer them to a plate and let them rest for a few minutes. Sprinkle with chopped green onions and a few extra sesame seeds for garnish.
- Serve and Enjoy: Serve the LA Galbi with steamed rice, kimchi, and any other side dishes you like. These Korean BBQ short ribs are perfect for a summer barbecue or a cozy dinner at home!
