Ingredients:
- Protein and Meat:
- 200g Spam (or any canned ham), sliced
- 2-3 hot dogs, sliced
- 150g ground beef (optional)
- 1/2 block tofu (firm), cut into cubes
- Vegetables:
- 1 medium onion, sliced
- 2-3 cloves garlic, minced
- 1/2 cup kimchi (preferably aged), chopped
- 1 small zucchini, sliced
- 1-2 cups shiitake mushrooms or enoki mushrooms, chopped (optional)
- 1/2 cup baked beans (optional, for authenticity)
- Broth:
- 4 cups water or anchovy broth (for a deeper flavor)
- 1 tablespoon gochujang (Korean red pepper paste)
- 1 tablespoon gochugaru (Korean red pepper flakes) – adjust to your spice preference
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar (optional)
- 1 tablespoon garlic (minced or crushed)
- 1 tablespoon of doenjang (fermented soybean paste) (optional, for richer flavor)
- Other:
- 1-2 cups ramen noodles (or any instant noodles)
- 1 tablespoon green onions, chopped (for garnish)
Instructions:
- Prepare the Broth:
- In a large pot, combine water (or anchovy broth) with gochujang, gochugaru, soy sauce, sesame oil, sugar, and minced garlic. Stir well to dissolve the gochujang and make a smooth broth.
- Bring the broth to a boil over medium-high heat, then lower the heat to a simmer.
- Layer the Stew:
- Add the sliced Spam, hot dogs, and ground beef (if using) into the pot.
- Add the kimchi, onions, garlic, zucchini, mushrooms, and tofu cubes on top of the broth. Stir gently to combine the ingredients.
- Cook the Stew:
